Food science- what do the different ingredients do?

We have been doing lots of baking in Room 8. We made one great batch of muffins, then the next time we forgot to add the baking powder. The muffins didn't rise and were very doughy! That got us wondering why the other ingredients are important.  So we decided to take out the sugar, egg, or milk. We noticed that the different ingredients changed the colour, size, texture and taste of the muffins. Then the Room 8 kids asked if we could put in other ingredients instead of these ones. Watch this space to see what we used and what happened!
